
Raw Cherry Pie
Crust:
1 cup dried coconut shredded
1 cup raw almonds
4 medjool dates
1/2 teaspoon pink Himalayan salt
Put in vita mix and blend,
make into a ball and place into glass pie pan, stretch to size
Filling,
6 cups fresh cherrys, split into 4 cups and 2 cups
2 tbs fresh squeezed lemon juice
1 cup dates
Blend 4 cups pitted cherry's
2 tbs fresh lemon juice
1 cup pitted dates
Do not over blend I like it light chunky
Pour onto pie crust
take the remaining pitted cherry and cut them up to a desired size and place on top.
Refridgerate for30 min to one hour and serve.
PS , Make a Coconut cream and whip it for those who will think it's not raw!!!
